- 400 gr. short pasta "rigata"
- 150 gr. parmesan cheese
- 70 gr. gruyere
- 70 gr. hollandaise cheese
- 70 gr. mozzarella chesse
- 60 gr. butter
- 70 ml cream
- salt
- pepper
Preparation:
- Put pasta in a deep 2 litres capacity pan. Pour 700 ml. lightly salting boiling water onto it, cover and place pan in the oven at maximum heat for 3 minutes in , keep on cooking at medium heat for 10 minutes. Stir two or three times.
- Meanwhile, dice hollandaise, mozzarella and gruyere cheese. Dice halt of the parmesan, choose the softer part, grate the rest of it. Chop butter when pasta is ready, drain almost completely: save 4 tablespoons of water. Add diced cheese, butter, cream, a pinch of pepper (freshly ground if possible) and half of the granted parmesan.
- Mix well, cover the pan with a lid and let it stand in the oven switched off for 4 minutes, so that the pasta complete its cooking and cheese melt. Serve it really hot, with more grated parmesan.
