Ingredients:
- 500 gr. sliced pineapple in syrup
- 75 gr. Self raising flour
- 75 gr. corn flour,
- 100 gr. granulated sugar
- 50 gr. Butter
- 2 eggs
- 1 lemon with a nice peel
- 1 tsp of baking powder
- 125 gr. glace cherries
- Vanilla essence
- Little milk
- Salt
1. Drain pineapple
slices and put them on a towel. Butter a 24 cm diameter cake pan, and dust it
with a tablespoon of sugar.
2. Work the
remaining butter with a spoon until creamy. Add carefully: yolks, remaining
sugar, grated lemon peel. Sift onto the mix: flour, starch, half packet of
baking powder and vanilla flavor. Add as much cold milk as required to obtain a
fluffy mixture.
3. Beat the whites until stiff, then fold them lightly into the batter.
4. Put a slice of
pineapple in the center of the pan and the other slices all around and arrange
the cherries amongst the pineapple. Pour the batter on the pineapple, even it
and put the pan in the oven on CONVECTION mode for 40-45 minutes. After cooking
time, permit the cake to stand for 5 minutes in the oven switched off, then
turn it out onto a serving dish. Let cool and serve.
